Which is better with cheese fondue? Beer or wine?
We are eating traditional cheese fondue right now.
Instead of drinking wine with it, we decided to have a beer.
But my wife swears she heard this causes the cheese to congeal or congest in your stomach. Is this true? Does beer have a different effect than wine?

Wine and beer both work, because you can MAKE fondue with either beer or wine, and either drink will compliment the cheese.
That sounds like an urban myth. Still, white wine is the appropriate drink for cheese fondue!
I’ve eaten cheese and things with cheese and had beer, and have never had a problem!
As for choosing between beer and wine with fondue, I guess it depends on the type of cheese, and on what item is being fondued, dude!
I think wine and cheese go together well, but I like some cheese with beer.
Traditionally wine, as fondues are often made with wine. However, my husband and my favorite fondue is made with beer (Melting Pot is the best restaurant), and that would go great with beer.

It would be a personal taste But in my opinion I would probably prefer wine (white and dry) ~ beer would probably be too heavy with cheese fondue.
***Actually most of the good quality cheese fondues are made with wine in them that’s reduced down to evaporate the alcohol…
I personally prefer a white wine with a traditional cheese fondue. Thats because the cheese in fondue is typically Gruyere and Emmenthaler, which go exceptionally well with a Riesling or Gewurtztraminer. But then again some red wines go well with those cheeses too, like Pinot Noir.
I haven’t yet tried fondue with beer but I’m sure it would go well with a fine Belgian Abbey Ale or Trappist Ale. I have had on many occasions beer and cheese together and it pairs well. Especially darker beers with raw milk cheeses.
I haven’t heard anything about beer causing cheese to congeal in the stomach though. If anything cheese is easier to digest than most dairy products because the bacteria in cheese helps to digest the lactose and proteins in cheese. Cheese is also less likely to cause lactose intolerance because of this. The only downside to eating cheese and beer is the high amount of calories, carbs and fat your consuming.
Both are good but I think you need to pair the right wine/beer to the right cheese.
Such as Cheddar and beer or wine and swiss???
Which do you like to drink more? That is the only determining factor that matters. Pair drinks with your food based on taste and accent flavoring.
I’ve never heard of the cheese congealing in the stomach, and I love to have wine with fondue. But either will work. A good crisp Fume Blanc or Gerwurtraminer (for white wines) would work well. A lighter red wine such as Sangiovese or Pinot Noir could work, too. Good luck.
I personaly drink red wine usually, but sometimes, I love some fresh rosé with it !
