I agree with the others: A Chardonnay or Riesling will be just fine.

When a recipe calls for white wine, I use either a sauvignon blanc or a pinot gris/grigio. I buy the little 4 packs of little bottles for cooking so a whole big bottle doesn't go to waste. Currently I'm using Bella Sera pinot grigio. I wouldn't recommend a chardonnay, they're too oaky and buttery nowadays and would overpower the cheese.

Honestly, any white wine will do.

Chardonay, Pino Grigio, even a Riesling would be OK.

Any mid-grade white would be fine.
