Beetroot and Chocolate in a cake – who’d have thought.

   
There are many deviations of this beetroot and chocolate cake recipe that have appeared in countless recipe books and online, but this is my personal favourite.

Here are the ingredients you will need

2 Eggs
3/4 cup of oil
1 cup sugar
1 1/4 cups of plain flour
1/4 cup of cocoa
1 teaspoon of bicarbonate of soda
1 teaspoon of vanilla (extract if you can get it, essence if you can’t)
1 cup tinned or cooked beetroot

Preparation time will be about: 15 mins or less

Once you have assembled all the ingredients, follow these simple directions

Step 1.
Beat jointly the sugar, egg and oil.

Step 2.
Sift together the sugar, plain flour, cocoa and the bicarbonate of soda.

Step 3.
Puree the beetroot in a blender and combine with all the other ingredients in a big mixing bowl. The mixture should come together as a moist paste, much like traditional cake mix. If it’s too dry, add some of the fluid from the tinned beetroot or a miniscule amount of water.

Step 4.
Line a round baking tin with greaseproof baking paper & add in the mixture

Step 5.
Place the cake in a pre heated moderate oven at 170c / 340f for around sixty minutes, or until you can put in a cool knife into the cake and it comes out clean.

Once completed, let the cake cool and now all you need to do is sit back,relax and enjoy the fruits of your labor.
When you perfect this cake, it will be a moist but not overly sweet treat that will leave yor friends guessing what the secret ingredient is.
