Megan Cohn loves her husband. She also loves chocolate. What began as a Friday night family tradition to go with ice cream and TV is now her business. This year for Valentine’s Day, she’s sharing some of her favorite ideas for creating a luscious, romantic day from simple, delicious recipes, to mood setting home accents.

The Chattanooga-based company produces two amazing all-natural flavors, Original Dark Chocolate and Mint Chocolate, both made with the finest European cocoas and natural ingredients. The result is a dense, ganache-like sauce perfect to spoon, melt, spread or dip.

The Food

The Easiest Fondue Ever

Simply melt Chalmers Chocolate Original Dark Chocolate in either a double boiler or fondue pot (careful not to microwave it as it ruins the texture). Serve with cut up pineapple, apples, pears, pound cake and your favorite cookies.

Divine Mint Hot Chocolate

To prepare, heat one cup of milk per person to scald – avoiding bringing milk to a boil. Add 2 Tbs. Chalmers Chocolate Mint per 1 cup of hot milk. Stir, and adjust to taste. Pour mixture into hot chocolate bowls. Serve hot with fresh whipped cream and a mint leaf to garnish.

Simple & Splendid Sandwich Cookies

Spread shortbread rounds or thin chocolate wafer cookies with a layer of the Chalmers Chocolate of your choice and press another on top to create simple, splendid treats. Arrange them on a cake plate to present as a special Valentine’s treat before or after dinner

Sweet & Savory

This amazing treat brings together sweet and savory in a seductive dance. Grab a thin, crusty baguette from your favorite bakery. Slice the bread thinly. Spread a generous layer of Chalmers Chocolate Original Dark Chocolate on the slices and sprinkle lightly with a few grains of coarse sea salt (or Hawaiian – for a subtle red accent) on the center of each slice for an amazing mix of flavors.

The Mood

-Print passages of your favorite poems on white, linen paper. Singe the edges of the poems for an aged look. Leave these bits of love around the room and tack one to the front door. -Toss red scarves over your (non-halogen) lampshades for a sensuous, lounge-y look.

-Fill votive candle holders with cinnamon red hots and nestle red or gold candles inside. Pepper the room with these for a romantic glow.

Byron Bennett can legally call his East Village shop the Chocolate Library.

This fall the education department — which regulates the use of the words library, school, academy, institute and kindergarten in certificates of incorporation and company names — rejected Mr. Bennett’s application. The thought was that the store might be confused with one of those places that lends out books or provides free Internet access.

But after a call from Diner’s Journal, officials reconsidered. Mr. Bennett received a letter from the department on Monday telling him that he could amend his business’s incorporated title, Chocolate 101, to reflect the name on his shop’s awning.

“It was clear that upon second review the use of the term library of this retail chocolate establishment did not pose a problem,” said Tom Dunn, a spokesman for the education department.

But the controversy shouldn’t have existed in the first place, said Mr. Bennett, 38, who said no one had mistaken his business for an actual library.

“This changes things a lot,” Mr. Bennett said. “Now we can move forward comfortably with our brand.”

What’s next for Mr. Bennett? Books, naturally.

Before the ruling he had held off selling books about the origins and history of chocolate and how to cook it. He also plans to set up a kiosk where customers can research the international selection of chocolates he sells. He hopes to reach his goal of carrying 100 brands of chocolates.

“We’ll get through Valentine’s first,” Mr. Bennett said.

This Valentine’s Day indulge with delicious desserts like chocolate-covered strawberries made with stevia since there’s no need for sugar or chemical sweeteners for this and other mouthwatering desserts, according to Sensational Stevia Desserts cookbook author Lisa Jobs.

In addition to the lower sugar content, the chocolate sauce used for these strawberries has no high fructose corn syrup, mono-glycerides, di-glycerides, polysorbate 80 or other undesirable ingredients found in commercial chocolate syrups.

“The old adage, ‘have your cake and eat it too’ really does apply when preparing desserts with stevia. Using stevia lowers your sugar and carbohydrate intake and virtually eliminates the highs and lows associated with sugar. Stevia also has no known side effects, unlike what many suffer from sugar and chemical sweeteners. Jobs offers this recipe for Chocolate-Covered Strawberries excerpted from her book Sensational Stevia Desserts:

Chocolate-Covered Strawberries

Serving Size: 2 Tbsp.• Total Servings: approx. 8 (Makes about 1 cup sauce)

1-cup (8 oz.) chocolate chips (preferably Ghirardelli)

¼ cup 2% milk

3/8 tsp. stevia extract (see book, page xii for brand variances)

¼ tsp. vanilla extract

In a 2-cup measuring cup, mix chips and milk. Microwave on high for 1 minute. Stir until chips are melted and mixture becomes smooth (you may have to microwave an additional 15 to 20 seconds).

Stir in stevia and vanilla. If small clumps are still present, beat with electric or handheld mixer until completely smooth. Hold the strawberries by the stem and dip them individually in the chocolate sauce and place on wax paper-lined cookie sheet. You can either serve immediately or refrigerate for 1 hour or more and enjoy. You can also use this sauce as a fondue or delicious covering for other fruit, nuts, pound cake or angel food cake. Refrigerate leftover sauce and reheat in microwave.
