What kind of Cheese should I use for Fondue???

I got a fondue set for Christmas and wanted to use it for Valentines day, but I don’t know what kind of cheese to use or what I should dip.
Bread… Veggies… Cooked Chicken cubes…
I know how to melt chocolate and use it for “desserts” but have never used it with cheese.

What kind of alcohol in chocolate fondue?

I am making chocolate fondue for valentines day and i have heard that alcohol in in the chocolate is really good.
My question is what kind would be even more delicious? Or if you have a certain recipe that is really good I would no mind reading it!
