    I take 1/4 cup butter, 1/4 cup flour, cook it in a pot till it looks like cream of wheat, whisk in 2 cups milk, whisk till it thickens, add cup of shredded cheddar, pour into a fondue dish and dip away!

    Here’s one: http://recipes.epicurean.com/recipe/1669/melting-pot-style-fondue.html It seems milder than the one my wife and I enjoyed at The Melting Pot on our anniversary. That recipe had dry white wine, a splash of kirsch (Blackberry brandy?) garlic, two types of cheeses (one was Swiss) 1/2 of a lemon squeezed, salt, pepper…I think that was about it. Maybe do a search for those ingredients and you’ll find it. Here’s the descriptions of the available varieties taken from the Melting Pot website. (I had to download a copy of their menu)

    Cheddar Cheese Fondue
    Aged, medium-sharp Cheddar and Emmenthaler Swiss cheeses, lager beer, garlic and seasonings.

    Fiesta Cheese Fondue
    Cheddar cheese with the flavor of Mexican herbs, spices, jalapeño peppers and salsa.
    Served with crisp tortilla chips… and made as spicy as you like.

    Traditional Swiss Cheese Fondue
    Grùyere and Emmenthaler Swiss cheeses, white wine, garlic, nutmeg, lemon and Kirschwasser.

    Wisconsin Trio Cheese Fondue
    Fontina, Butterkäse and Buttermilk Bleu cheeses with white wine, fresh scallions and a hint of sherry.
